Ripe harvest olive oil is the product of olives collected at their most mature state, when nature offers its richest bounty. This process takes place in November and December, as olives transform from green to purple and finally to black on the tree. During this period, olives contain a higher oil content and offer a softer, more balanced flavor profile.
The harvesting process is carried out with great care to prevent any damage to the olives. Although olives are usually harvested by hand or with the help of poles, at Mavras, olives are harvested by machines and transported to the factory immediately after being picked.They are processed without delay using the cold-press method. This method preserves the valuable components inside the olives, ensuring that the resulting olive oil is of the highest quality both in terms of nutritional value and taste.
